I am keen to understand if Workbooks can work out commissions form sales for a particular Sales Rep. I know that we can work out the profitability of a line item in Products but would like to see if there is any way we could track the amount of commision too

This link contains information on how to report on sales performance. The main goal of the article is to show how well sales reps are doing against their targets. However, in the criteria, you could constrain by the product, so that you're only getting the result of that. Hope this helps.
