I need to create/edit product categories. When I create a new product, I am asked for "Category" but I just can choose a pre-defined values. I can't change this in Configuration>Customisation>Picklist.
Furthermore, I'd like to add more fields when I create a new product. Is that possible?

You'll be able to find this picklist in Start > Configuration > Customisation > Picklists, where the picklist in question is called Product Categories.
And yes, just like any other record, you are able to add more fields to a Product record. For information on how to do so, follow our Knowledge Base article on customising records here.

Are you able to stipulate the order in which you want the products to be displayed when adding a line to an opportunity? Its default setting is to display them alphabetically by product code however it would help the sales team to navigate them if I could alter this.
